Among the fatty acids of the maize oil, the unsaturated fatty acid takes up over 80%, of which the linoleic acid is an indispensable fatty acid that cannot be synthesized by human bodies. It can reduce the cholesterol content in human bodies, soften blood vessels, enhance the cardiovascular system function, prevent and improve the arteriosclerosis. Besides the linoleic acid, the maize oil is also rich in sitosterol, vitamin E and other functional nutrients. The sitosterol can reduce the serum cholesterol, and lower the initiation potential of angiocardiopathy. Vitamin E is a natural antioxidant, which can defer the senescence of human bodies.

The maize oil is prone to be absorbed by human bodies and the absorption ratio is as high as 97%. Thus, it is an ideal edible oil and healthcare oil. In families of Europe and USA valuing the diet nutrition and health, they generally choose maize germ oil as the major edible oil.

The maize oil emerges in USA. The large scale production of the maize oil began in the 1910s. Since the 1950s, families of developed countries begin to take maize oil widely. As the maize oil contains high nutrition, the long-term consumption can help to maintain the health of cardiovascular and cerebrovascular system. Thus the maize oil is very popular in the market.

USA is the largest maize oil production country all over the world with its maize oil production taking up over 50% of the world total production. Most of the maize oil exported to Southern Europe and Middle East comes from USA. Presently, the maize oil consumption in China takes up only a small proportion in the edible vegetable oil consumption. Nevertheless, China possesses large planting areas of maize and high yield of maize. Thus, there is large potential for the maize oil development in China. China is the world second largest maize producer. The planting area of the maize is only less than that of paddy and wheat. In recent years, Chinese maize yield is 150-160 million tons per year. Most of the maize is used for feed production and maizestarch extraction, while only a small proportion is applied for oil production. Among the grain crops, the oil content of ordinary maize is about 4%-6%, higher than that of paddy (2.3%), wheat (1.9%), sorghum (3.4%) and barley (1.9%) but lower than that of pearl millet (5.4%) and oats (7.0%). However, restricted by the unit production, taking pearl millet and oats as oil corps requires a high cost. In comparison, high-oil maize possesses the oil content of 8%-9% and its yield is also very high.

Though the oil content of high-oil maize is lower than that of soybean (20.0%), rapeseed (40.0%), peanut (50.0%), sesame (55.0%) and sunflower seed (45%), the planting area of maize is large and the unit production is high. Through deep processing and comprehensive utilization, the value of high-oil maize can be raised greatly and the economic effectiveness will also be improved considerably.

In 2008, affected by the world economic crisis, the global edible oil consumption was reduced compared with that in 2007. In 2008, the consumption of the edible oil was 114.4737 million tons. However, in 2008, the production was 122.76 million tons, exceeding the demand. Among that, the production of palm oil, soybean oil, rapeseed oil, sunflower seed oil and peanut oil was 41.40 million tons, 38 million tons, 19.50 million tons, 9.78 million tons and 5.15 million tons, taking up 33.7%, 31%, 15.9%, 7.97% and 4.2% of the global vegetable oil production separately; their aggregate production accounts for 92.77% of the global vegetable oil production.

In recent years, Chinese residents pay more attention to the environmental protection and health in their consumption. The green consumption ethical concept concerning environmental protection and health is improved greatly. When choosing the consumable, consumers concern not only the price, quality, style and service, but also its impact on their health. As a new type of health edible oil with the function of improving the health, the maize oil is favored by more consumers, especially middle-aged and old people. With the concept “the maize oil is fragrant but not greasy, which is a good choice for the health of people” filtering into people's minds, consumers place more dependence on the maize oil.

In 2008, the production of Chinese maize oil exceeded 400,000 tons, the majority of which is industrial oil (for soap production, etc). With the increasing attention on the health and the improvement of the cognition on the maize oil of customers, Chinese maize oil consumption begins to increase with the annual growth rate of over 30%. In 2007, the consumption of edible maize oil was only 80,000 tons in China. In 2008, the consumption reached 120,000 tons. The consumption is predicted to be raised to 160,000 tons in 2009. In economic developed regions of China, there are certain quantities of consumers of the edible maize oil. The maize oil is expected to be the new highlight of the edible oil market.

Influenced by the healthy consumption concept, the consumption of Chinese edible vegetable oil tends to develop towards the environmental protection and health. As a kind of healthcare oil, the maize oil develops much better. In the coming years, the maize oil will develop toward improving the environmental protection effect, quality and healthcare function, paying more attention to the technology content of the products, enhancing the oil yield of the products and increasing the nutrient content in the maize oil such as the fatty acid, glutamic acid, vitamin E, etc; it will emphasize the environmental protection and health concept as well as the high nutrition of the products in the marketing.
