Citric acid is a white odorless crystalline acid with a sour taste, naturally occurring in citrus fruits. Its chemical formula is C6H8O7. There are three common types of citric acid: anhydrate, monohydrate and sodium citrate. Citric acid can be produced by the three different processes: synthesis, extraction from fruits and fermentation. The major portion of the processed citric acid is employed in food and beverages industries; over 70% of the overall output is used as a flavoring or an acidifier. Citric acid is also utilized as an antioxidant, metal polishing and cleaning agent. It is also an essential ingredient in the production of pharmaceuticals, cosmetics, etc.
North America and Western Europe represent the top consumers of citric acid, while China is the dominant manufacturer. In the end of the 1st decade of the 21st century, the worldwide citric acid production capacity climbed to 1.79 million tonnes per year. CellMark, Command Chemical Corp., Technichem, Alfa Chem, NeuChem, Suzhou-Chem, Tianjin Ji Ao Chemical Co. and Dalian Huisheng Trading Co. are the most prominent players of the world market for citric acid.
