Air Protein refers to a new type of protein ingredient produced by using carbon dioxide, oxygen, nitrogen and renewable energy through gas fermentation, hydrogen-oxidizing bacterial fermentation or microbial protein synthesis. Instead of relying on conventional farmland or large-scale animal farming, the process converts carbon sources, nitrogen sources and energy into protein-rich microbial biomass in bioreactors, which can then be processed into powders, food ingredients or nutritional products. Air protein can be used in alternative meat, protein powders, functional foods and animal feed, and is regarded as an important segment of sustainable protein, precision fermentation protein and carbon-utilization food technology. In 2025, global Air Protein production reached approximately 1366 tons, with an average global market price of around US$8200 per ton.The production capacity for Air Protein in 2025 was approximately 2000 tons. The typical gross profit margin for Air Protein is between 20% and 40%.
