UHT (Ultra-High Temperature) Processing is a continuous high-temperature short-time thermal treatment technology used in the food industry for liquid and semi-liquid products. In this process, the product is typically heated to 135?C or above for a very short holding time and then rapidly cooled, followed by integration with aseptic storage, aseptic transfer, and aseptic filling, in order to achieve commercial sterility and extended ambient shelf life. A UHT processing system generally consists of heat exchangers, steam heating modules, holding tubes, flash cooling units, homogenizers, aseptic tanks, valve clusters, cleaning and sterilization units, and automated control systems. According to the process route, it can be divided into direct and indirect systems; according to equipment structure, it can be divided into plate, tubular, and scraped-surface types. This technology is widely used in ambient dairy products, plant-based beverages, fruit and vegetable juices, soups, sauces, cream, dessert bases, and other liquid food categories that require product safety, flavor stability, and ambient distribution capability.
