Sodium citrate is a white to off-white, odorless solid with the molecular formula 258.06. Sodium citrate easily dissolves in hot water and is soluble in cold water. The product does not dissolve in alcohol. Naturally, sodium citrate occurs in citrus and other fruits, and in coffee. Sodium citrate has a sour and salty taste.

Sodium citrate is widely utilized in medicine and in the food industry. The product is used to solve a number of problems. It induces a laxative effect relieving constipation. Moreover, sodium citrate relieves the symptoms of mild cystitis, reduces the acidity of urine, prevents stomach acid aspiration during anaesthesia. Furthermore, it functions as a food additive, and preservative, antioxidant, acid, flavoring, emulsifier or firming agent. Sodium citrate gives soda and other lemon-like soft drinks their flavors. The product is found in such products and beverages as ice cream, candy, fruit juice, wine, juice, jam, canned fruit and vegetables, frozen fruit, cheese spreads, dressings, preserves, cheese, mayonnaise.
