Pullulanase (limit dextrinase (erroneous); amylopectin 6-glucanohydrolase; bacterial debranching enzyme; debranching enzyme; О±-dextrin endo-1,6-О±- glucosidase; R-enzyme; pullulan О±-1,6-glucanohydrolase) refers to an enzyme that is utilized in hydrolysis and transglycosylation of О±-1,4 or О±-1,6 linkages in polysaccharides, such as pullulan, starch and glucogen. Pullulanase fastens the speed of the reaction and improves the content of glucoamylase and maltose. The physical state of pullulanase is lyophilized powder.

The enzyme is produced by fermentation of the B. licheniformis strain. The process is carried out in sterile conditions to avoid or minimize the risk of contamination and mixing with other microorganisms. Food-grade raw materials act as a fermentation medium in this process. The medium controls pH level by providing nutrients and compounds.

One of the most common uses of pullulanase is the production of starch. This enzyme degrades starch to glucose and maltose. Pullulanase is utilized in glucose and maltose syrup production. The product is used in the processing of cyclodextrin and in baking. The number of applications will significantly increase in the foreseeable future in proportion to the emergence of new possibilities for industrial processes.

Pullulanase causes eyes, skin and respiratory tract irritation. The product is harmful if swallowed, inhaled and if absorbed through skin.
