Pectin, a.k.a. fruit pectin, modified citrus pectin, acide pectinique, pectinic acid, etc., is a structural heteropolysaccharide. It is an off-white to beige powder that is practically odorless. Pectin is found in the cell walls and between cell walls of the higher plants. This heteropolysaccharide partially dissolves in cold water. Pectin is insoluble in organic solvents, dilute alcohol, alcohol. Dried citrus peels, apple or sugar-beet pomace are the main raw materials for the production of pectin.

Pectin is widely used in the food, cosmetics and medicine industries. Pectin is commonly known as a gelling and thickening agent and as a stabilizer in the food products, mainly in jellies, yoghurts, marmalades, jams, etc. The product is also used in juice-based beverages to improve pulp stability. Pectin is known to be utilized in the cigar industry where the heteropolysaccharide is used as an alternative for vegetable glue. In medicine, pectin is an ingredient for making special medical adhesives and preparations for healing wounds. Pectin is considered to be effective in reducing the levels of blood cholesterol.

Pectin can produce mild irritation of skin and eyes. Large amounts of swallowed pectin may lead to the irritation of the gastrointestinal tract. The respiratory tract may be irritated by the inhalation of the pectin dust.
