Galactose, or D-Galactopyranose, cerebrose, brain sugar, galactopyranose, is known as a simple sugar with the molecular weight 180.15 and molecular formula C6H12O6. It occurs as a white, odorless powder or solid that melts at 168-170 В°C.

The product is monosaccharide and consists of six carbons and an aldehyde group. D-Galactose and L- Galactose are two forms found in nature. D-Galactose is present in milk as part of the disaccharide lactose. It is produced by the aqueous chromatographic separation process.

Galactose is found in supplements for health purposes, dairy products, sugar beets, gums and mucilage.

Galactose has a good taste, dissolves in water at room temperature, is suitable for diabetics, has a high physical and chemical stability. The product is effective in keeping the immune system healthy. It takes part in the formation of cells.

Galactose may provoke transient eye discomfort with conjunctival redness and tearing. Ingestion of galactose may cause gastrointestinal tract discomfort. Inhalation of the product may result in further disability in people with impaired respiratory function. Prolonged contact with high dust concentrations of galactose can lead to changes in lung function.
