Catalase (ethyl paraben, ethyl butex, napagin A, tegosept E, aseptin A, etc.) is a protective enzyme that occurs practically in all living organisms. Catalase is a colorless to brown, odorless solid with the molecular formula C9H10O3 and molecular weight 166.17. The boiling point of the enzyme is 297-298В°C. Catalase is only slightly soluble in chloroform, trifluoroacetic acid, and insoluble in carbon disulfide.

Catalase is used by all aerobic organisms for respiration. The enzyme catalyzes the breakdown of hydrogen peroxide to water and oxygen. The product preserves the food products by preventing oxidation. The enzyme is also utilized in the cold sterilization process.

Catalase can produce the irritation of eyes, skin, the digestive and respiratory tract. The product may be harmful if swallowed, inhaled or if absorbed through the skin. Overexposure to catalase can lead to sensitization in some individuals.

The enzyme finds applications in different industries.
