Food-grade monohydrate crystalline glucose refers to food-grade crystals containing one molecule of water of crystallization (C?H??O?·H?O) obtained from edible starchy raw materials such as corn starch through a dual-enzyme liquefaction and saccharification process (?-amylase + saccharifying enzyme), activated carbon decolorization, ion exchange purification, multi-effect evaporation concentration, and cooling crystallization. It conforms to the national standard GB/T 20880, with a purity ?99.0% (dry basis) and a moisture content of 7.0-9.5%. It possesses a cool, sweet taste, moderate hygroscopicity, and good water solubility and fermentability, making it an important sweetener, filler, and fermentation carbon source in the food industry.

Food-grade monohydrate crystalline glucose uses edible corn starch as the main raw material (accounting for 70-80% of the total cost, which must meet the GB/T 8883 standard for edible starch, controlling protein, fat and ash impurities). After conversion by a dual-enzyme method (?-amylase liquefaction + saccharification by saccharifying enzyme), it is supplemented with activated carbon (decolorization), ion exchange resin (desalting and removing impurities) and crystallizing agent (promoting crystallization). The production process is a high-energy-consuming process, requiring a large amount of steam for multi-effect evaporation and concentration (increasing the solid content of the sugar solution from 30% to 70-80%) and a cooling water system for crystallization. In addition, food-grade packaging materials (multi-layer woven bags or paper-plastic composite bags, 25-50kg/bag) are required. In terms of cost structure, fluctuations in corn starch prices directly determine product costs (the correlation coefficient between the two is 0.81). Raw materials account for 75-80% of costs, energy (water, electricity, steam, and wastewater treatment) accounts for 8-10%, while auxiliary materials such as enzymes and activated carbon, as well as manufacturing costs such as labor, depreciation, and packaging, account for only 10-15%. Due to the high degree of standardization and significant economies of scale in production, it exhibits a pronounced 'raw material cost-driven' characteristic, and the profits of production enterprises are greatly affected by fluctuations in corn purchase prices.
