Food hydrocolloids are a group of functional biopolymers used in foods to control texture, stability, water management, and sensory performance. Food hydrocolloids include seaweed-derived systems such as carrageenan and alginate, animal-derived gelatin, plant gums such as guar and locust bean gum, microbial fermentation products such as xanthan and gellan gum, and food-grade cellulose ethers such as methylcellulose and HPMC. The value of Food hydrocolloids is not simply that they make products thicker.
