The characteristics of low-temperature edible soybean meal are: high protein content, generally above 45%, high nitrogen solubility index (NSI), generally above 50%, indicating high protein digestion and absorption rate. The fat content is low, generally below 1.5%, which is beneficial to prevent oxidative deterioration and prolong the shelf life. Low anti-nutritional factors, such as urease, trypsin inhibitor, insulin-like growth factor binding protein, etc., are beneficial to improve nutritional value and biological activity. Light in color and fragrant in taste, it is suitable for food processing, such as soybean milk, soybean milk, tofu, etc.
